No bake hot chocolate mix cookies

The other weekend my boyfriend and I were enjoying a quiet Saturday night, cozied up, ready to watch a movie while it was pouring outside. The one thing we were missing? A sugary treat! The only thing we had on hand were some Healthy Choice fudgsicles in the freezer. Ew. I decided I needed to whip up something sweet ASAP. I hopped online to find some quick, easy, no-bake cookies that didn't involve chocolate chips (because we didn't have any, and I was in no mood to brave the rain). From start to finish, this recipe took me 12 minutes. I modified it a bit (it called for twice as much sugar, which I think would be insanely sweet). Here's my one disclaimer: If I had the choice, I'd pick a chocolate chip cookie over these any day. But if you're in a pinch and want to whip up something in a hurry (and you don't have choc chips on hand) these no bake cookies will satisfy a sweet tooth craving and get the job done!


Ingredients
1 cup sugar
1/2 teaspoon salt
1/2 cup butter
1/2 cup milk
1/2 cup peanut butter
3 cups rolled oats
1 teaspoon vanilla extract
1/2 cup powdered hot chocolate mix

Directions
In a medium saucepan, combine sugar, salt, butter and milk over medium heat. Bring to a boil for 1 minute. Remove from heat. Stir in peanut butter, oats, vanilla and hot chocolate mix. Drop by spoonfuls onto waxed paper. Let stand until completely cool. Enjoy!

Recipe makes 3 dozen.

  3. I love these cookies. I was looking to change them up just slightly. I began experimenting with different things and ran across something that opened up many varieties of flavor. I decided to substitute cold stone creamery flavored liquid coffee creamer for the milk! It was wonderful! My favorite. I have also added just a little bit of instant coffee with a little more peanut butter. Wanted to share this with you, and praise your recipe!
