Chocolate Covered Strawberries and Pinot

Today I’ve teamed up with Estancia Wines for a fun food pairing with Estancia’s Pinot Noir. Since Pinot tends to have red fruit flavors and complex chocolate aromas, I thought chocolate covered strawberries would be the perfect pairing, especially with Valentine’s Day just around the corner!

I’ve never made chocolate covered strawberries before and I thought it might be difficult, but it was actually pretty easy! The hardest part was drizzling the white chocolate on top in a way that was aesthetically pleasing (which I’m not totally convinced I actually accomplished, but that just means I’ll have to make them again, because practice makes perfect—right?). Here’s what you’ll need to make your own chocolate covered strawberries for V-Day:
1 cup semisweet chocolate chips
1/2 cup white chocolate chips
1 pound of strawberries (about 20 strawberries)
Put the semisweet chocolate chips and white chocolate chips in separate, microwave-safe bowls. Microwave the chocolate separately for thirty seconds. Be careful not to over-microwave or the chocolate will burn. Take the chocolate out and stir. Microwave for another thirty seconds. Take the chocolate out and stir until smooth.
Lay out parchment or wax paper (or foil like I did, since I was out of the other two) to place strawberries on. Hold the strawberry at the stem and dip it into the dark chocolate, twisting it to cover all sides. Let the excess chocolate drip off and place on the parchment paper. Once you’ve dipped all the strawberries in dark chocolate, stick a fork in the melted white chocolate and drizzle the white chocolate on the strawberries. Let the strawberries sit until chocolate sets, about one hour. Enjoy!
